Type

Is a very rare type of oil that is harvest every two years. This is type of olive tree that is unknown to us. We have this trees from the beginning of our story, because of that these trees have more than 120 years.

Characteristics

- Taste:
Rich and full aroma: It has a very pronounced, full flavor with a slight bitterness and spiciness that appears in the aftertaste. This bitterness is a sign of the high quality and freshness of the oil.
Fruity and herbal notes: You can feel notes of fresh herbs, green peppers, as well as slight fruity aromas such as green almonds.
Hot at the end: A hot note is often present, which means that the oil is rich in polyphenols, which are also beneficial for health.

- Color:
Greenish gold: The color of this oil is usually light to dark green with a slight golden hue, which depends on the freshness of the olives at the time of harvest.

- Aromas and smell:
Fresh smell: Olive oil has a clean and fresh smell, which is often grassy, ​​green, with a slight smell of freshly picked lawn.
Green tone: The smell of green olives is very pronounced, which gives the oil a characteristic freshness and lightness.

- High polyphenol content:
This oil is known for its high polyphenol content, which not only gives it its characteristic bitterness and pungency, but also has numerous health benefits, such as anti-inflammatory and antioxidant effects.

- Acidity:
Olive oil usually has a very low acidity (below 0.5%), which means it is of high quality and suitable for a wide range of culinary uses.

What to use it for

- Salads:
Salad dressings: Olive oil is great for dressing cold dishes. Simply combine it with lemon juice, balsamic vinegar or apple cider vinegar, salt and pepper. Its full aroma makes it suitable for all types of salads, especially those with more delicate ingredients such as arugula, tomatoes, avocado and cheese.
