WINE - REFOŠK 2023

Refošk is one of the most recognizable and traditional red wine varieties, originating from Istria and Friuli-Venezia Giulia in Italy and Primorska in Slovenia. It is a wine with a distinctive rich flavor, distinguished by its varietal characteristics and connection to this area. This wine is often a true symbol of these wine-growing regions.

- Color:
Dark red: Refošk is a wine that usually has a deep red color, which can range from ruby ​​red to dark purple, depending on the age and production method. Early wines can be lighter, while older wines take on more intense dark hues.

- Aroma and smell:
Fruit notes: The wine usually has strong fruit aromas, including dark berries such as blackcurrants, blackberries and blueberries. Sometimes there is also a smell of ripe cherries and raspberries.
Spicy and herbal notes: Light spicy notes such as pepper, bay or thyme are also usually present, giving the wine complexity and depth.
Soil and earth: Refošk can sometimes also contain light earthy and mineral aromas, due to the soils on which olive trees and vines grow in Istria. This is typical of the terroir of this area.

- Taste:
Full and rich: Refosco is a medium to full-bodied wine that is often more robust and complex. The taste is usually firm, with a slight tannic structure that is not overpowering.
Acidity: The acidity is medium high, which gives the wine a freshness and makes it more drinkable, while also helping to balance the richness of the flavor.
Fruity and spicy notes on the palate: The palate features dark fruits (e.g. blackberries, cherries), often accompanied by spicy, herbal and slightly earthy notes.

- Alcohol content:
The alcohol content of Refosco wine is usually between 12% and 13% vol., but can also be slightly higher in more concentrated specimens.

- Red meat:
The wine goes well with beef, lamb, game, as well as roasted meats such as roast chicken or roast pork.

- Grilled meat:
Due to its firm structure and tannins, Refosco is the perfect companion for various types of grilled meat.

- Sausages and cured meats:
It also goes well with cured meats such as prosciutto, salami and other Istrian specialties.
Cheeses: It goes well with aged, strong cheeses such as hard sheep's cheeses, parmesan or more spicy cheeses.

- Pasta with red sauces:
Refosco is the right choice for pasta with meat sauces such as bolognese sauce, or for pasta with mushrooms.
